Ingredients
1 big onion chopped fine
2 big tomatoes chopped fine
½ cup carrot, French beans chopped
¼ cup green peas
1 big potato cut into cubes
½ small cauliflower
Ginger garlic paste
1 tsp. turmeric powder
1 tsp. coriander cumin powder
1 tsp. red chili powder
salt
oil
Kolhapuri masala
1 bay leaf
2 tbsp. grated coconut
1 black cardamom
1 green cardamom
1 tsp. black pepper
1 tsp. sesame seeds
4 dry red chillies
2 cloves
½ inch small cinnamon
1 tsp poppy seeds
1 tsp coriander seeds
Method
In a pan or kadia boil all the vegetables for few minutes.
Roast all the dry ingredients of kolhapur masala ,and grinder in a mixture to make a powder form.
Take pan, add oil, now add chopped onion cook it till golden brown.
Add ginger garlic paste and cokk it till the raw aroma goes away.
Now add chopped tomatoes and cook it for minutes, now add all the spices salt,tumeric, red chilly powder, Coriander cumin powder, add the grinded kolhapur masala. mix well everything properly
Add the 1 cup water , add all the boil vegetables and closed the pan with lid and cook for few minutes till all the vegetables get cooked with spices.
Serve hot by garnishing with fresh coriander leaves.
