Ingredients
2 1/2 cup cooked basamati rice
1 1/2 cup chopped brinjal(baingan)
1 onion cut into slices
1/2 tsp turmeric powder
3-4 garlic cloves chopped fine
2 tbsp peanuts
6-8 cashewnuts
1 green chilly slit cut
1 tsp cumin seeds
1 bay leaf
5-7 curry leaves
1 tsp channa dal
1 tsp udad dal
2 tbsp tamarind juice
salt
oil
1 1/2 tbsp vangi baath masala
vangi Baath masala powder
1 tbsp coriander seeds
4-5 dry red chilies
2 tbsp coconut desiccated
1/2 tsp poppy seeds
2 cloves
1/2 inch cinnamon stick
1 tbsp chana dal
1 tbsp udad dal
1/4 tsp fenugreek seeds or meethi seeds
Method
First in pan dry roast all the vangi baath masala ingredients till it start to leave its fragrance. let it come to room temperature then powder them finely in grinder or mixture.
Take pan add oil, now add cumin seeds , channa dal, udad dal, curry leaves , slit green chilies and onion , saute it till golden brown, now add peanuts saute for few minutes .Now add chopped brinjal and cooked it for 6-7 minutes by covering the lid.
Now add turmeric powder, vangi bhaat masala, tamarind juice and cashew nuts, mix well everything properly now add cooked rice.
cover the lid for 30-40 seconds so that the flavor get mix with the rices.
garnish it with coriander leaves.
