Oats Upma a healthy breakfast which is loved by everyone as the mix vegetables are added to it.The curry leaves give the extraordinary flavor to the oats upma. When i wake on Sunday morning mom asked me what you will have in breakfast so it thought to make the the healthy morning by making the oats upma . I had used the gluten free organic steel cut oats which are natural.
steel cut oats are a rich source of fiber, protein and magnesium not only are you able to eat them as oatmeal but they add health benefits to breads, bakes and protein shakes all of that simply makes our oats a cut above the rest.The difference between rolled and steel cut oats is that steel cut leaves the endosperm intact, making them healthier than rolled.
Oats Upma
Ingredients
1 cup steel cut oats
1 cup mixed vegetables
(carrot, french beans, capsicum, green peas)
1 small onion chopped fine
2 green chilly chopped fine
4-5 curry leaves
2 tbsp peanuts
1/2 tsp turmeric powder
1/2 tsp red chilly powder
1/2 tsp mustard seeds
salt
oil
coriander leaves
grated coconut
2 1/2 cup of water
Method
First roast the oats in pan for few minutes at medium flame. Remove it in plate and keep aside.
Now take kadai or pan add oil , add mustard seeds when it start to crackle add the chopped onion ,curry leaves ,and green chilies and saute it till onion start to turn golden brown.
Now add peanuts and chopped vegetables saute it for 1 minutes , add turmeric powder, red chilly powder .add 1/2 cup of water and cover the lid and cooked it for 2-3 minutes.
Now add the roasted oats and remaining water ,cover the lid and let it cook for 10-15 minutes .stir it every 3-4 minutes so it dint get burnt or stick at bottom. Add more water if required.
Add chopped coriander leaves and garnish it with grated coconut,
Serve it hot.
