Chipotle Pasta

Ingredients
10 boiled baby potatoes or 4-5 boiled big potatoes cut into cubes
1 onion chopped fine
1 cup tomato puree
7-9 garlic cloves
1/2 inch ginger
2 green chillies
1 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp red chilly powder
3-4 dry red chilly
1 tbsp jaggery
1 tsp garam masala
1 tsp cumin coriander powder
pinch tumeric powder
salt
oil

Method:

In a mixture make the paste of ginger,garlic,green chilly,1/2 tsp cumin seeds,dry red chilly.

Take kadai add oil, add cumin seeds now add chopped onion, cook till golden brown. now add paste and cook it for 2 min till raw aroma of garlic goes away.

Add tomato puree cook it for 5-6 minutes.Add all the spices turmeric powder,salt,red chilly powder, garam masala, coriander cumin powderand jaggery.

Add little water and boiled aloo, cover the lid and cook for 4-5 minutes.

Serve it hot with by garnishing it with fresh coriander leaves.
