During the winter season we can get fresh vegetables from the market , so i had planned to make the Mix vegetables sabji as i having cauliflower, pigeon peas, potato, carrot, french beans and brinjals. A delicious sabji made from different vegetables, You can add vegetables of your choice. i had used spring onion instead of normal onion and used the green garlic so give the some unique flavor and taste to it.
1 small cauliflower cut into small florets
1 big potato cut into small cubes
1/2 cup carrot
4-5 small brinjal
3/4 cup green peas
3/4 cup pigeon peas
7-9 french beans chopped fine
3-4 spring onion chopped fine
4-5 spring green garlic chopped fine
1 Tomato cut into cubes
1/2 tsp cumin seeds
1/2 inch grated ginger
1 tsp cumin coriander powder
1 tsp red chilly powder
1/2 tsp turmeric powder
1/2 tsp kitchen king
some dry fenugreek leaves
2-3 dry red chilly
Make the cut into the brinjal with knife and keep aside.
Boil green peas and pigeon peas in water for 5-7 minutes.
Take pan add oil , now add now cumin seeds as soon it start to crackle , dry red chilly, add the chopped spring onion , spring green garlic and grated ginger into it. saute it for few minutes.
Now add all the vegetables,sprinkling some water on it.Cook it for 10-15 minutes by covering the lids.
when the vegetables are cooked add turmeric powder, red chilly powder, kitchen king, cumin coriander powder, salt and dry fenugreek leaves. sprinkle some water and cook it for 2-3 minutes.
Garnish it with fresh coriander leaves.
Serve it Hot with Roti.
