A healthy Sugar Free sweet made from Anjeer and dates can be made on the special occasion. So thought to make the healthy Sweet Anjeer Khajur roll with lots of dry fruits.
Anjeer Khajur Roll
1/2 cup Mix Dry fruits chopped fine
( cashew nut , almond , pistachio, walnut)
1 tbsp ghee
1/2 tsp cardamom powder
2 tbsp poppy seeds
First soak Anjeer in water for 15 minutes as Anjeer will get soft and will be easy to grind.
Remove the water and grind Anjeer in a mixture.
Now add the dates in a mixture removing the seeds and grind it properly.
Now take nonstick pan add ghee add mix dry fruits roast it for few minutes at low flame.
Add Anjeer and date mixture , cardamom powder and cook it for 5-7 minutes at low flame till it get cooked properly. Remove in a plate
Now roast the poppy seeds for 30 seconds in pan till it start to leave the fragrance remove it in plate.
Roll the Anjeer khajur mixture into cylindrical shape by applying ghee on hand.
Roll it over the poppy seeds properly.
Put the roll into cling slim and roll it properly. Refrigerator it for 2 hours.
Cut into piece removing from fridge.
